I'm Charline, the French pâtissière behind Maison Augustine.
My journey with food began in France, where I launched my first food truck in 2014, serving fresh homemade meals. That passion led me to open my own restaurant in 2017, where I deepened my love for refined, thoughtful cooking.
In 2018, my fiancé Fabien and I moved to Australia to begin a new chapter.
By 2020, I had created French Faves, bringing handcrafted French food and desserts to local markets around Newcastle.
In 2021, I opened a pâtisserie in Broadmeadow, welcoming customers into a space filled with buttery aromas, beautiful pastries and a shared love of French food. It was a chapter I was incredibly proud of, but living with Ankylosing Spondylitis eventually led me to rethink how I worked and what was sustainable long term.
Rather than stepping away from pâtisserie, I chose to return to a smaller, more intentional model focused on quality over quantity. Maison Augustine was born from that decision, a way to continue creating the French desserts I love while building a business that allows me to do so in a way that is sustainable for my health.
Maison Augustine is the natural evolution of everything I have learned along the way.
" Every creation is an invitation to slow down, gather, and savour the moment. "
