La Rubis is a modern French Christmas entremet, sculpted in a distinctive three-dimensional "Xmas" shape and finished with a beautiful red cocoa butter velvet spray.

Beneath its delicate velvet finish, strawberry mousse, raspberry gel and silky vanilla crémeux meet a madeleine cake and a crisp pistachio crunch.

Light and beautifully balanced, with a gentle sweetness and contrasting textures, La Rubis is an elegant centrepiece for your festive table.
